Raw Food: Berries and Cream
This is a really satisfying raw snack or light meal. The cream tastes so much like real reddi whip. Use fresh mixed berries, pineapple, bananas or other fruit. For the cream: in a bowl add 1/2 cup raw cashews and enough water to cover. Let this soak at least 15 mins to 1 hour to soften the nuts and get the enzymes working. Add the drained cashews and 1-2 dates to the blender and slowly add enough water to blend into a nice thick whipped cream consistency. I also added a touch of vanilla and cinnamon.
I'm so excited I received my Excalibur 3500 dehydrator and my Ninja Kitchen System, super blender/food processor/juicer/smoothie maker yesterday! I made a delish raw soup with dehydrated mushrooms and Braggs Liquid Aminos (using the Bragg's recommendation from Allysa Cohen's book) and also dehydrated some onions, red pepper and jicama enough to soften and warm them into a raw "stirfry". It was a very satisfying meal and so nice to have things warm but not cooked. The Excalibur book goes into detail about testing they have done showing enzymatic activity remains stable at least up to the usual 118 F cut off to be considered a raw food and usually it remains intact up to 140 F or even beyond.
